Meal 128: Pakistan

Pakistan was, until 1947, part of India. While the intention was to create a new country for Muslims, the dividing line was in many ways arbitrary, ill-informed, or simply doomed, given that religious communities intermixed plenty. In particular, the huge state of Punjab was split in two. Then, millions of people moved across the lines in both directions (or died in the attempt) to the country that reflected their religion. Both of these factors explain why Pakistani food seems so similar to the North Indian food we know: they were once the same country — in fact, much of the Indian food in the US is Punjabi style — and many immigrants brought foods from other parts of what's now the Republic of India.

This meal fell during Ramadan, which posed both an opportunity and a challenge. I was excited to have a guiding principle, since the food after the fast is often ritualized. But the challenge was the risk of offense by indulging in all the post-fast treats without observing the fast itself. Several Muslims assured me not to worry, and in fact a Pakistani member of the US Embassy's staff in Islamabad graciously gave me plenty of advice on what to prepare. (Thank you Erin for the connection!) In addition to the below recipes, we began the meal with the traditional fast-breaking food: dates.

Our guest of honor was Kal, a previous Nosher, who was born in Afghanistan but spent a decade as a refugee in Pakistan before coming to the US. We also had Katherine, Carlo, Marsha, Robert, Chie, Lyall, Eileen, and friends.

Rooh Afza | Sweet drink

This is the fast-breaking drink of Pakistan. It's a commercial syrup that's mixed with water — what's known in British English as a squash — and much improved with lime. (Some mix it with milk.) It's was a completely unfamiliar flavor sensation, a blend of all sorts of fruits, herbs, and spices with the most recognizable note being rose. It wasn't really my thing but I can see this sugary drink being extremely quenching after a hot day with nothing touching your lips after sunrise.

Fruit chaat | Spiced fruit salad | Recipe

Some cultures have figured out that bold spices are a fantastic complement for fruit. A shake of Tajín, a Mexican blend of chili, dried lime juice and salt, perks up mango, pineapple, and just about any other fruit or raw vegetable. In Morocco, they often serve orange slices with cinnamon. And now we here have Pakistan's contribution to the genre. The blend is more complex than the others I've seen before, with elements of sour, salty, pungent, and minerally. It would certainly perk up less-than-perfect fruit, but when it's really good and in season like here, it's pretty tasty and addictive and a failsafe appetite stimulant. 

Dahi bhallay | Black gram fritters in yogurt sauce | Recipe

From a Western perspective, what's curious about this dish is how the fritters are soaked in water after frying. Why let all that great crisp go? So they can absorb the yogurt and tamarind dressing that makes them oh so tasty. This dish is quite a bit of effort with the frying, so it's not the sort of thing I'd just go about making on a weeknight, but it was a flavorsome treat.

Sai bhaji | Spinach and legume stew | Recipe

This straightforward curry is a staple of Sindh, the province of southeastern Pakistan. It's pretty straightforward to make, a stew of greens, tomatoes, a mild amount of spice, and lentils or split chickpeas. Unfortunately, I felt like what came out was kind of what went in: it was perfectly edible, but just not terribly exciting, and it's unclear to me if I did something wrong or it's simply meant to be that way. There's no doubt, however, that this is one of the most nutritious dishes I have cooked for a Nosh!

Karahi gosht | Goat simmered in tomato sauce | Recipe

This recipe calls for mutton, and in the Subcontinent, mutton means goat. (Not the meat of mature sheep, as in the UK.) I like goat, and good goat can be hard to find, so I ended up buying an entire goat from a small-scale butcher. I used two legs for this meal; the rest is in the chest freezer.

Now, to the dish. This one was a winner! A really straightforward, low effort technique — simmer the meat until it's cooked, then put in sauce stuff and let it cook until tasty. You don't even have to toast spices or do any other tedious prep, just dump and simmer. Even though it ended up more liquidy than pasty like it should have (was my yogurt too runny, or tomatoes too watery?), the flavors were excellent and bright and I oughtta make this one again.

Mutton nihari | Goat stew | Recipe

I couldn't decide which goat dish to cook, so I made both. If you're only cooking one, choose the other. The nihari was totally fine, but despite all the spices, turned out sorta plain, which was a disappointment after cooking for half a day. As with the saibhaji, I'm not sure if there was an error along the way, or that's just how it's meant to be.

Chicken sajji | Slow-roasted chicken with spiced rice | Recipe

This recipe represents Balochistan, a mostly arid province bordering Afghanistan and Iran. This dish is a whole lot more like what I know of Gulf cuisine, with the animal roasted rather than cooked in a sauce. What's more, the rice is parboiled, which is a technique I associate with Persian food. (A stickler will note that rice in biryani, a pinnacle of Indian cuisine, is similarly boiled hard until nearly done. I will rejoinder that, in fact. biryani is of Persian origin.) Anyway, I loved this. Cardamom, vinegar, dried pomegranate, and even dates all feature, and make for one scrumptious whole.

Meal 127: Norway

The Midsummer festival, which is celebrated in Norway with the rest of Scandinavia, is a bit of a misnomer, in that it's actually around first day of summer. But whatever, it does celebrate the peak of the year, when days are super long and gardens are finally abundant with fruits and vegetables. We held ours a few weeks earlier, which actually worked out in Portland's seasons because we got the new potatoes, strawberries and rhubarb at their peak. Certainly not all Norwegian food is colorful and zippy. The most representative aspect of the traditional Norse diet is porridge, called grøt — from which we get the English word "grout," to give you a sense of the texture. Its centrality is represented in the Great Porridge Feud of the 19th century, in which a debate over whether to throw in a handful of raw flour right before serving served as a proxy for the conflict between tradition and science.

I ought to point out that the nearby Ikea was very handy for this meal, with items such as the right kinds of mustard and coffee, herring, rye crispbread, and even a mix for bread. Another Swedish import that proved indispensable was our guest Erika, who sliced the gravet laks and in general was a handy consultant on the preparation and service of all the dishes. This is all to say that Norwegian food is similar to Swedish food, but don't tell any Norwegian I said that.

Rabarbra Likør | Rhubarb aquavit | Recipe

Doesn't that look pretty? It takes as good as it looks, too, tart and flavorful, especially good when chilled. You could do some great cocktails with it, dilute with soda water, or simply sip it from a shotglass. (Don't shoot it, though, that'd be a waste!)

Agurksalat | Cucumber-dill salad | Recipe

Sweet, tangy, and extremely crispy and refreshing thanks to the ice-bath soak. As far as I'm concerned this is now my Platonic ideal of a cucumber salad.

Gravet laks | Salt-cured salmon | Recipe

So easy to make, and so impressive. A few minutes of plastering the fish with salt, sugar and dill (the name translates as "buried salmon"), turning it over once or twice a day in the fridge for a few days, and you're done. In fact, the most time-consuming and challenging part is the slicing, which Erika thankfully took care of. She shared a pro tip, that if you put the salmon in the freezer for a little bit, the firmer flesh is easier to slice. Relatedly, this dish freezes really well, just defrost and eat, so as long as you're making it you may as well make a lot. Oh, and don't forget to make the classic mustard-dill sauce to accompany.

Rekesalat | Shrimp salad | Recipe

There's more treats in the Norwegian sea. We had some little jars of various pickled herrings, and also this nice little shrimp salad, which in typical style features a lot of dill. This is a good opportunity to share an anecdote about why Norwegians traditionally don't eat predator fish: it's feared that any one of them have eaten part of a friend or relative who died at sea, so it's an abundance of caution to avoid being a second-hand cannibal.

Rabarbrasuppe | Cold rhubarb soup | Recipe

Just about the simplest way to eat this vegetable we treat as a fruit. Cook with water and sugar, chill, serve. It's a vibrant pink and exposes in the most essential way the complex flavor of this very cold-hardy late-spring treat. I tipped the leftovers into the ice cream machine and it made a fantastic sorbet.

Rømmegrøt | Cream pudding | Recipe

Heavy cream, sour cream, milk and buttermilk, totaling nine cups. And a cup of flour. This is one of the richest things I've ever eaten, and while more than a little tangy with that sour cream and buttermilk, it was pleasantly balanced out with cinnamon and sugar. It's the culinary opposite of Midsummer, and indeed it's best known as a Christmas Eve dish. You could see why someone would want to eat this in the middle of a dark and cold winter.

Nypoteter | New potatoes

A true new potato is so delicate you can rub the skin off an uncooked one with your thumb, and unlike most potatoes really ought to be kept refrigerated and hence is only available around the late-spring/early-summer harvest time. It has a texture that's both flaky and creamy, with a much brighter flavor than a typical potato. As far as I'm concerned there's only one way to cook new potatoes: boiled, drained, and tossed with butter and a bit of salt. Oh, and because it's Scandinavia, a healthy helping of dill too.

Kjøttkaker | Meatballs | Recipe

Compared to the more famous Swedish meatballs, these have more spices, and are a little bigger and flatter. The balls were as tasty as they look; the sauce was a lot of work and not my favorite, which is likely because of the brunost — a unique "cheese" that's actually made of caramelized whey.

Vafler | Waffles

I made so many dishes that I ran out of time to assemble the cake. I baked it, but just didn't have the time to make it up, so I froze it. And everyone wanted waffles anyway. Maya did a super good job of making them (unfortunately I've lost the recipes we used!), covering them with strawberries, and making everyone happy.

Meal 124: Nigeria

For our first ever Nosh in LA, a very Portland thing happened: it started raining while we were barbecuing. It wasn't too hard, and it actually made standing near the glowing coals really pleasant. And who knows, maybe that extra bit of moisture helped the beef suya skewers turn out as well as they did. Nigeria is by far Africa's most populous country, ranked #7 in the world at 192 million — with a median age of eighteen and the highest growth rate of the top 15 countries. There's enormous diversity of language, culture and religion, and accordingly there's a lot of variety in the food, though fortunately for the sake of Noshing, there are themes that run throughout most if not all of the food traditions, as well as foods associated with a particular ethnic group that are popular all over.

Egusi pepper soup | Melon-seed spicy stew | Recipe

Soup is the core unit of most Nigerian meals. The term is applied more broadly than I'm used to; from what I can gather — and please, if you're more familiar with the cuisine, correct me if I'm wrong — any sort of food that's been cooked in liquid until soft will qualify.

The two soups I kept coming across were pepper soup and egusi soup. The former isn't a reference to chilis, but rather various spices named for a passing similarity to black pepper. The latter is a melon seed that's ground up and lends thickness, texture, and flavor. Having the time and kitchen space to make only one, I was glad to find that there's at least one group, the Urhobos, who combine them.

If you don't have a West African market near you there's no sense in trying to make it, as you almost certainly won't find the core ingredients elsewhere. If you do, well, maybe try finding another recipe. Despite the several steps and promising ingredients, the soup ended up as a confused and underwhelming jumble, both visually and flavor-wise. Or maybe I just messed it up. Either way, maybe better to stick with one soup or the other.

Garri | Cassava balls

Frequent readers of the blog, all five or so of you, will know that I've struggled with African porridge/mush, and so often ended up with something lumpy and runny. Well, this time I think I nailed it, with something thick enough to roll into balls. I think it's something about how the prepared cassava flour doesn't require any cooking, so you can keep adding either water or flour as needed until the consistency is right.

In Nigeria, a mass of starch like this is called a "swallow." You pinch a piece of it, form it into a scoop, pick up some of the soup or other thing you're eating, and swallow it all.

Suya | Spicy beef kebabs | Recipe

Lots of cultures grill meat on skewers, and some of them season the meat with a dry spice rub. But I've never seen ground peanuts mixed into the spices, the way the Hausas do it. This addition was awesome, adding just a bit of crunchy texture and just barely toning down a moderately fiery rub. A keeper!

Ewa | Honey beans in sauce | Recipe

This dish resembles the more straightforward ingredients and technique that I've encountered in many other African countries' meals. What's notable is the beans, a relative of the black-eyed pea that has a less prominent "eye," is more brown, and has a mildly sweet flavor, hence "honey beans." It was fine, maybe even good if you particularly like the flavor of palm oil.

Boli | Roasted plantains | Recipe

Many Nigerian sweets are fried, but making them would have violated my "no deep frying in other people's kitchens" rule. And fortunately, the market had packages of chin-chin, little semi-sweet fried nuggets. But we had to do something more, and the grill was already hot, so we made the simple yet very satisfying treat of sweet plantains cooked with nothing more than charcoal. There's something exotic about grill marks on fruit, and the end-of-the-coals low heat made for some very nice caramelization. While grilled plantains are most often eaten alongside fish and sauce, in this case they made for a very nice gently sweet finish to the meal.

Meal 123: Nicaragua

I try not to knock the countries whose food we cook, but I have to admit I've generally found Central American food to be pretty boring. The Nicaraguan food we cooked mostly fits the pattern, with one huge exception: enormous, overloaded, rich nacatamales. The variety of ingredients, from raisins to olives to rice to pork, is so enshrined in each family's recipe that it's like canon; as one fourth-generation nacatamal vendor put it, "We don't innovate. We make everything step-by-step the way we were taught." Joining in our attempt to avoid innovation were Emily (and Stella!), Courtenay, Courtenay Hameister +1 Elia, Julie, David, Nancy, Sue, Kaely, Brett, and friends. Muchísimas gracias to Emily for her guidance in all things Nico — that is, Nicaraguan.

Refresco de chia con tamarindo | Tamarind-chia drink | Recipe

There's a surprisingly broad range of non-alcoholic drinks in Nicaragua. Emily brought over a premixed cebada, a barley-based drink, while I whipped this one up from scratch. Well, sorta. I bought whole tamarind pods and tried to soak and strain them, but they were super old and tough, so I cheated and used an Indian tamarind concentrate. Way easier! I put the chia on the side, because not everyone enjoys boba-like texture in their drink.

Vigorón | Yucca with slaw and pork rinds | Recipe

It's odd how sometimes a very particular combination of foods becomes a common thing, almost like someone's late night fridge raid accidentally got enshrined in the national culinary canon. In this case, it's plain boiled yucca root with a mildly tangy cabbage slaw and fried pork rinds, wrapped in a banana leaf. It didn't do too much for me, though it was fun learning to make chicharrones from scratch.

Nacatamales | Deluxe tamales |Recipe, Article

I am a huge fan of Mexican food, but I'm just not a fan of the tamales, most I've had are pretty dry and almost all corn with just a bit of some filling. The Nico version, on the other hand, is rich and just about bursting with filling.

To start, the pork is great just on its own, in a vibrant red sauce. I was stoked to find the sour oranges fresh at Providore, and since every recipe called for a different cut of meat, I went with pork shoulder because I needed the skin for the chicharrones, and the generous layer of fat for the masa. Now that's how to avoid a dry tamal, just douse the corn in lard! The third component of the tamal is all the other random stuff you fill it with: rice, potatoes, tomatoes, onion, mint, olives, prunes, raisins, peanuts, capers, and chiles. You practically clear the pantry! Then it's all assembled on top of banana leaves — which themselves contribute to the flavor and moisture — wrapped and steamed for several hours.

Oh man, I loved these! So much flavor and color, so many textures, every bite a little adventure. They're so filling that I can hardly believe that the traditional accompaniment to a nacatamal is, I kid you not, bread.

Gallopinto | Rice and beans | Recipe

Very similar to the Costa Rican version with which I'm more familiar. According to Emily, this recipe was fancy compared to typical, which should be little more than leftover plain rice and beans, stir-fried. That said, this still didn't have a ton of flavor, the tamales were way better.

Maduros en gloria | Creamy sweet plantain casserole | Recipe

In extreme contrast with the Spartan plainness of gallopinto, this dish lives up to the name that literally translates as "ripe ones in glory." The ripe ones in question are fried sweet plantains, and the glory is layers of cultured cream and sweetened salty hard cheese.

Meal 122: New Zealand

A little over two years ago, when our now-good-friend Deena did an NPR piece about United Noshes, someone in New Zealand noticed and I did a phone interview on Radio NZ. I promised that when we got to their country, I'd get back in touch. And I did! We did a fun bit where they had listeners send in advice through social media of what to cook, which we chatted through live on the radio. So what do Kiwis eat? Well, lamb, of course, since that's what they raise a ton of for wool and meat alike. Otherwise it's in large part based on traditional English foods like sweet and savory pastries, with a growing influence of fresher Mediterranean flavors, blended with some indigenous influences like sweet potato.

Kiwi dip

While we Americans love our convenience, one thing we really haven't gotten into is canned milk products, so we suffer the inconvenience of a perishable product as the base for our otherwise dead-simple French onion dip (recipe: mix one packet of onion mix into sour cream; serve). Well, Kiwis have no such aversion, and their reward is no temporal constraint on their ability to whip up the equivalent dip, using a can of what they call reduced cream and what we can find in the States in Hispanic markets or supermarket aisles as media crema. They even gussy it up a bit with a dash of malt vinegar, but since any self-respecting NZer would have that on hand anyway, the extra effort is still less.

It's really tasty. Eat with thick or wavy potato chips, or veggies if you want to pretend you're being at least a little healthy.

Along with the dip, we had ray oysters on the halfshell. They were in homage to, but certainly no replica of, Bluff oysters, a particular species that's found at the southern tip of the South Island. Equally fatty, but much classier.

Mince and cheese pie Recipe

One Radio NZ listener wrote in that the national dish is really a "$2 mince and cheese pie from the dairy," which in American English means "$1.40 ground beef and cheese hot pocket from the convenience store." So I made one! The all-butter puff pastry crust probably made this a bit fancier than the grab-n-go version, and of course as a whole pie the crust-to-filling ratio was surely off, but otherwise I think this turned out to be a fairly accurate and tasty replica. Speaking of, "tasty cheese" is apparently what Aussies and Kiwis call what we'd think of as sharp cheddar cheese, to the extent that you can refer to "tasty and crackers" and people will apparently know what you mean.

Watties sauce | Recipes

It seems that Watties is to NZ what Heinz is to the US, the universal tomato condiment. Watties is apparently a little runnier, a little sweeter, and a little more spiced — it's known as tomato sauce, not ketchup. Not finding any here, I made my own, with frozen pureed tomatoes from last year's harvest. The recipe I followed had a shocking amount of allspice, so I cut back quite a bit and even then it was pretty strong. It was pretty good, but unless you have a strong reason to recreate the flavor of the original (like, if you have an around-the-world cooking project or are really trying to impress a Kiwi), you may as well just make do with ketchup.

Lamb with mint sauce | Recipe for mint sauce

There's about seven sheep for every New Zealander — and that's down from twenty a few decades ago! — and accordingly, those Radio NZ listeners made very clear that lamb was required on our table. It seems that the classic version, fit for a feast, is a roast leg, whether in a classic austere British style, or enlivened by garlic and herbs; the latter's what I chose to do. I got a whole leg (bone in, including the shank), studded it with garlic and rosemary, and let it cook for hours. I also whipped up some mint sauce with a splash of malt vinegar, two ingredients that contrast nicely.

The lamb was good, but not great, kind of a disappointment given the quality and expense of the meat. I mean, we all enjoyed it, but I was hoping it'd be something more.

Minty peas Recipe

Mint again! Green peas, green onions, and mint made for a vibrant hint of sunnier days. Easy to throw together, tasty, and decently healthy.

Kaanga waru | Steamed sweet potato and corn pudding |Recipe

To properly represent the cuisine of the Māori, the indigenous Polynesians who predated the British, I ought to have done a hangi. But that would have required digging a pit in the yard, superheating rocks in an adjacent fire, quickly moving said rocks into the pit, lowering in sackcloth-enrobed bunch of meat plus veggies, and covering the whole thing with soil for several hours. Even if I had all the space and time, it seems that watching a few YouTube videos isn't enough, that without having learned from others you risk making a muddy, undercooked mess of it all. Time for plan B.

Several listeners suggested that our meal include kumara, which as the sound of the name suggests is also a Māori food; Americans know it as sweet potato. While kumara is quite common around NZ, this dish is Māori through and through, though the cooking technique and most of the ingredients come from the British! It's a dense loaf of shredded kumara, cornmeal, flour, sugar, milk and butter, steamed in a cheesecloth. It's dense, and it's really pretty tasty.

Pavlova | Baked meringue with fruit | Recipe

Aussies and Kiwis may argue about who owns the "pav," but history is on New Zealand's side; while it grew very popular in Australia, it first took form in Wellington during the tour of the ballerina Anna Pavlova, who was described as dancing as if she were lighter than air.

A pav is a marvel of kitchen chemistry, starting with the goop of some egg whites and ending with a magical, etherial mass that's crisp on the outside and chewy like a marshmallow on the inside, all thanks to a ton of beating and strategic addition of sugar, cornstarch, and an acid. Once the science is over, the art begins: the pavlova is a blank canvas for decoration with fruit to your heart's and eye's desire. Of course, ours had kiwifruit!
